So this cookie goes by many names but in my family we call it "Christmas Crack" because you can’t just have 1 piece and you always keep coming back for more! I’ve made 2 batches in the last 3 days to bring into the office and it’s all pretty much gone!!!
I also love this recipe because it is SO easy to make for any occasion! And I recommend doubling the recipe because 1 won’t be around for long! ;-)
Christmas Crack Cookie Bites

Line cookie sheet with aluminum foil, and spray generously with cooking spray.

Bring butter and brown sugar to a boil, stirring continuously for 2 to 3 minutes.
Remove from heat; add one teaspoon pure vanilla extract.
Pour mixture over crackers, and then bake for 6 minutes.

Allow to soften for a minute or two, then spread chocolate evenly on top of crackers. (Optional - add nuts, sprinkles, or M & M's on top of melted chocolate)
